BANANA & PEANUT BUTTER and HONEY ON TOAST
- 2 thick slices of uncut granary bread, toasted
- 1 banana, sliced
- 1 heaped knife of peanut butter
- 1 spread of olive oil spread
- 1 spread of Manuka honey
Toast the bread. Spread the peanut butter on one slice, and top with banana. Spread the oil spread and honey on the other slice.
Savour. Every. Single. Mouthful.
When I get up at 6.30am on a weekday and go for a 6km run in the dark and cold. Then I get back and do some shoulder exercises with weights and some ab exercises in between. And my son sleeps in so I run after him to make sure we’re not late for school. I like to treat myself to sweet toppings on thickly sliced toast for breakfast.
Know what I mean?
There are other mornings in the week for porridge, eggs or a green smoothie. This morning, I had this.
It’s pretty self-explanatory, don’t think I need to explain how good this is. Although I will say, despite it’s naughty appearance, it’s still firmly on the side of a healthy breakfast in my opinion. Given the amount of exercise I had done by the time I was eating this, it’s a great refuel meal.
Manuka honey is the queen of honeys and it comes from New Zealand, so of course I’m a fan! Bananas contain manganese, potassium, fibre, protein and magnesium, to name just a few of its assets. OK peanut butter is probably not the best of the nut butters, but it’s the best with bananas and I used a good brand that is literally just nuts with nothing added.
