An end of the week salad

WARM CHICKEN SALAD

  • Handful of rocket
  • Handful of pea shoots
  • Three mushrooms, sliced
  • Half a yellow pepper, sliced
  • Five cherry tomatoes, halved
  • Two spring onions, sliced
  • Cooked chicken breast, sliced
  • Tsp 5-spice
  • Tbsp sweet chilli sauce
  • Handful of peanuts

Fry the onions, peppers and mushrooms in one teaspoon of coconut oil. Whilst they are softening up, put the salad leaves and tomatoes in a pasta bowl. Throw the chicken, 5-spice and sweet chilli sauce into the frying pan. Stir together until everything is hot. Add a splash of water if it’s getting a bit dry and sticky. Pour the contents of the pan onto the salad and sprinkle with the peanuts. Eat.

I love healthy food, love the flavours, the colours, the fact that it’s feeding my body in the right way. But I also love snack food, I love biscuits, crisps, chocolate, sweets all that stuff too. I have realised that my body is actually very happy with three big meals a day and minimal snacks. I thought I was a grazer, but that’s just because I had trained my body to be that way by having light breakfasts and skipping lunches. So I was a major snacker and ate a really large amount of chocolate and sweets. Every. Day.

Lunch is the hardest meal for me to do right. I’m only making it for me and I generally am busy in the middle of the day, so it seems like a hassle to take time out to make real food when I can eat a bag of crisps, a carrot and two lines of dark chocolate. Problem is by 4 o’clock I am wanting the same again. Maybe with a couple of biscuits and a some chewy sweets too.

Plus in the Winter I want something warm so that’s means cooking!  It’s just seems too much effort, right? The 90 Day SSS Plan forced me to prepare proper lunches, mainly because the snacks they suggested were awful! What I found was that the lunches didn’t take too long to prepare, they could be the most interesting meal of the day and if they had the right things in them, I was full until dinner.

This warm salad took about 15 minutes to cook and that’s with the chopping and slicing. I buy packs of pre-cooked chicken breast slices and bags of salad. Slicing a few mushrooms and peppers really doesn’t take too long and I am only washing up a frying pan/wok and a chopping board. At the moment, I’m based at home so I get to do this just before I eat it, but you could do this in the morning, put it in two containers, heat the hot one back up and pop on top of the leaves when you’re ready to eat.
